This country is the spice capital of the world, and regional dishes range from sweet and spicy (Southern) to hot and sour (Northern). Dishes from the tropical south are very spicy and frequently include curries of chicken and pork made with coconut, garlic and onion. Expect subtly spiced tandoori chicken and kebabs, seasoned with such interesting and fragrant spices as cardamom, garam masala (a spice blend), tamarind, and chilies. Lentil dishes are standard, often combined with onion and tomato. Fish and shellfish dishes may include a mustard steamed fish, crab masala, and several curries ranging from mild to very hot. Rice and nan, a delicate herbed fried bread, are always served with this delicious and varied cuisine.
